The scotch, a flagship from the beloved single malt scotch whisky distillery, was aged in Pedro Ximénez and Oloroso sherry casks resulting in a smooth, balanced, lightly sweet Scotch. And it genuinely pairs wonderfully with the cheddar. We tried the pairing here at Cool Material and loved the sharp cheese balancing out some of the sweet/smoky notes of The GlenDronach 12. Simply pour a small sample of scotch — we tried it neat — and prep a slice of the cheddar on a club cracker.
