The Cereal Circle is an interesting cocktail. It incorporates two brandies and is driven by the breakfast flavors of Cheerios. “I wanted to work a savory flip into our seasonal menu that had an unexpected addition of flavor,” says bartender Mike Joes of Sable Kitchen & Bar in Chicago. He’s combined two classic flips, a Sherry Flip and Brandy Flip, which balance the creaminess of the whole egg. “Cheerios remind me of the simple pleasures of my youth, and when infused overnight with the simple syrup, it gives a playful touch of ‘breakfast’ to this flip without overwhelming the palate.”

- 0.75oz PF 1840
- 0.75oz Yahara Bay Kirschwasser
- 0.5oz Palo Cortado Sherry
- 0.75oz Cheerios syrup
- 1 whole egg
Dry shake, shake and fine strain into a Georgian glass. Garnish with Cheerios “dust.”
