If his fantastic episode of Chef’s Table was any indication, Dan Barber is almost fanatical when it comes to the elements of a meal at Blue Hill, and that includes the Blue Hill Steel Handmade Knives you’ll use if you make it to Blue Hill at Stone Barns. Crafted by Michael McCarthy in his experimental studio in upstate New York, each of these knives is a custom piece made from salvaged farm equipment that’s been expertly treated and forged to create the piece you see here. Each unique knife has a handle that’s been gilded with hand-brushed brass and a blade sharped with an antique sandstone grinder. If you want the only knife truly suitable for a meal from Blue Hill at Stone Barns, you might as well get one of their actual knives.
