Made by Ryan Zotovich for Winc, Chop Shop is a juicy, complex, full-bodied Cab made to pair with barbecue dishes and the umami of smoked meats. In other words, it leverages Zotovich’s love for smoking meat and his reputation as the go-to guy for brisket and BBQ ribs in Santa Barbara to create a wine that’s a great alternative to a cold one. The wine is described as having notes of plum, red cherry and spice with some dark, complex nuances thanks to the touch of Petit Verdot and Cabernet Franc.
