With around 3,000 breweries in the United States, it’s tough for the new guy to stand out. Jared Rouben (formerly of Goose Island) is doing just that with his latest venture Moody Tongue. The Chicago-based brewery just unveiled a 5% ABV lager that’s made with shaved Australian black truffle and it will run $120 a bottle. Not simply a marketing gimmick, the brewery is setting its sights on “culinary brewing” where they marry beer and food (Rouben is also a former chef). The truffles used were shaved by hand, and since pilsners are crisp and clean, the flavor of the truffle really stands out and makes for a complex brew.
