Unbeknownst to most, Carlsberg created a pure yeast over a century ago and distributed it for free to other breweries to combat beer sickness and widespread inconsistencies in repeated brews. The Re-Brew project uses an extracted sample of that original yeast from a 133-year-old Carlsberg bottle recently discovered in an old cellar to recreate the Father of Quality Lager that started it all in the late 1800s.
